1 food processor, 4 simple and healthy ingredients, 5 minutes of your time, and here you have a delicious snack between the meals or an after-dinner treat.
100g gluten-free oats, ground into flour
50ml coconut milk ?
30g peanut butter ?
20g ? honey
Pinch of salt
Mix all ingredients in a high-speed blender until your mixture gets a dough-like consistency
Refrigerate for 30 minutes
Roll little balls using your hands
Dust with cocoa powder
You can keep these no-bake cookie bites in the fridge in an airtight container for up to 7 days. However, I doubt, they will last so long.
Unfortunately not school lunch-friendly because of the peanut butter. However, if your kids don't have any allergies, they are a great after-school snack.
