Easy and delicious dinner in 30 minutes? Of course! This garlic and lemon chicken is so nice and crispy on the outside and tender and juicy inside. Perfect meal-prep option.



6 organic or free-range chicken thighs, skin on, bones out

4 tbsp of extra virgin olive oil

Lemon zest of 1/2 lemon

4 tbsp of lemon juice (approximately 1/2 large lemon)

2 tbsp freshly chopped coriander leaves (cilantro)

23 garlic cloves, minced

1 tsp chili flakes (leave out if cooking for kids)

2 tsp of ground cumin

2 tsp salt

1 tsp garlic powder


  1. Combine all the ingredients for the chicken marinade in a medium-size bowl.
  2. Add the chicken thighs and mix well so that the chicken is fully covered with the marinade.
  3. Cover with an air-tight lid and refrigerate for at least 30 minutes.
  4. Preheat oven to 200’C (400’F)
  5. Heat 1 tbsp of extra virgin olive oil in the OVEN-PROOF frying pan and fry the chicken thighs on medium-high heat for 3-4 minutes.
  6. Transfer the frying pan into the oven and bake the chicken for 20 minutes. Serve and enjoy!
