This roasted cauliflower and chickpeas with cumin and coriander is one of my husbands’ favorite dishes of all time. You can enjoy it hot, directly out from the oven or cold on the next day. It is so easy to make. When you don’t have time to cook but want to have something healthy and delicious, this will be your “go-to” dish. It will literally take you 10 minutes to prepare and about 30 minutes to roast.

Roasted Cauliflower and Chickpeas with Cumin and Coriander

If you like cauliflower, you will love this easy-to-make roasted cauliflower recipe with chickpeas. Spiced with cumin and coriander it makes a perfect lunch or dinner, healthy and delicious. Don’t forget to pin it!


  • head head cauliflower
  • 1 tin chickpeas (Also known as garbanzo beans. Always use BPA free lining tins.)
  • 34 tbsp olive oil (extra virgin)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp salt
  • coriander to serve


  1. Start with washing your cauliflower and drying it with a clean towel. Heat oven to 200° (400°F)

  2. Cut the cauliflower into the bite-sized florets and put it in the large mixing bowl. If you have a very fresh cauliflower and have green leaves, you can roast them as well.

  3. Rinse the chickpeas and add them to the bowl with the cauliflower.
  4. Now add the olive oil and spices and toss them with your hands to combine. Make sure everything is evenly coated with spices.

  5. Add parchment paper (if using) to the baking tray and transfer cauliflower and chickpeas onto the tray. Spread it out evenly.

  6. Bake it for 20-30 minutes tossing them one or two times. All ovens are different so please see when cauliflower turns golden brown. It might take a little longer.
  7. Remove from the oven and serve!
