This is the only chicken meatballs recipe you will ever need. They are healthy, quick, easy to make and are absolutely delicious. I know you will love it as much as I do.
500g of organic or free-range chicken mince (I always use chicken thigh mince)
1/2 brown onion (though any onion will work)
1/2 cup of gluten-free breadcrumbs (or 2 slices of your favourite gluten-free bread)
70g of Parmesan cheese
1 free-range egg
salt and pepper
Preheat your oven to 200'C (400'F)
In the food processor, combine gluten-free bread slices, parmesan cheese, and onions until you have a breadcrumbs-like texture. (Thermomix 6 seconds on 8)
Add the free-range egg, the chicken mince, salt, and pepper, and mix well to combine. (Thermomix, reverse, 20 sec on 5)
Roll the small balls and place them on the baking tray.
Bake the chicken balls for approximately 30 minutes until fully cooked and golden.
