These Zucchini And Halloumi Fritters are fresh and light. They are very easy to make and are perfect for breakfast, lunch or dinner. Gluten-free of course!
200gHalloumi cheese, coarsely grated.Approximately 1/2 cup
2EggsFree-range if possible.
1/4cupChopped dillor use any other fresh hervs you prefer
1/2cupGluten-free flour
1tspGluten-free baking soda
Salt and black pepper
Olive or avocado oil for shallow-fry
Green Dressing:
1cupGreek yoghurt
1cupMixed herbs of your choice. I used a mix of mint, dill and parsley.
Juice of 1/2 lemon
Instructions
ZUCCHINI AND HALLOUMI
Wash and pat dry the zucchini. Coarsely grate the zucchini using a box grater.
Place the grated zucchini in a colander, sprinkle with salt, and let sit in the sink for 10 minutes to drain excess liquid.
Squeeze out excess water from zucchini using your hands or a clean kitchen towel. Transfer to a large bowl.
Grate the halloumi cheese using the same grater. Set aside.
GREEN GODDESS DRESSING:
In a food processor, blend yogurt, lemon juice, and fresh herbs until smooth.
Transfer the dressing to a small bowl, cover, and refrigerate until needed.
FRITTER BATTER:
In the bowl with zucchini, add eggs, halloumi, and dill. Mix to combine.
Sprinkle gluten-free flour over the mixture, then add baking soda and season with black pepper.
Gently mix until just combined. The batter should be thick but soft.
FRYING THE FRITTERS:
Heat olive oil in a frying pan or cast iron over medium heat.
Spoon the prepared batter into the pan, creating zucchini patties. Avoid overcrowding the pan.
Cook until golden brown on the bottom (2-3 minutes), then carefully flip using a slotted spatula.
Once both sides are crispy and golden, use a spatula to transfer fritters to a paper towel-lined plate. Repeat for the remaining batter.
Now your fritters are ready to be served. Enjoy!
Notes
Make sure to thoroughly squeeze the moisture out of the grated zucchini to prevent the fritters from being too wet.
Keep a close eye on the fritters as they fry. Adjust the heat if necessary to maintain a consistent temperature. If the fritters are browning too quickly, you can reduce the heat slightly. If they're browning too slowly, you might need to increase the heat.
Store any leftover Gluten-Free Zucchini and Halloumi Fritters in an airtight container in the refrigerator for up to 2-3 days. Reheat them in a preheated oven or skillet to maintain their crispy texture before enjoying them again.
You can adjust the seasoning according to your taste preferences. Add a pinch of chili flakes for some heat.
