Amazingly delicious gluten-free sugar cookies. Sweet and crunchy, just as you want good cookies to be. The best part they are incredibly easy to make. Don't forget to pin it!
Pre-heat the oven to 180°C (360'F) and prepare the baking sheets by lining them with baking paper.
In a large mixing bowl whisk together the flour, sugar, guar gum, and salt.
Add the pieces of butter, whisked egg, and vanilla paste. Knead everything together in a bowl into a smooth soft dough. Cover the dough and let it rest for 10-20 minutes, do not refrigerate.
Dust the work surface with gluten-free flour. Divide the dough into 2 parts. Keep one half in the mixing bowl, covered, so that the dough doesn't get dried out.
Roll out the dough until approximately 4mm thick (0.15 inches). Using a cookie cutter cut out the cookies and place them on the lined baking sheet. Leave a centimeter (0.4 inches) between the cookie as they will spread a little as they bake.
Bake the cookies for 15 minutes or until nice and golden around the edges. Take them out and leave them to cool on the tray before transferring them on a wire rack to cool down completely.
Repeat steps 4, 5, and 6 with the remaining cookie dough. Re-roll the trimmings too. Your cookies are ready. Enjoy!
Notes
As mentioned above, if you want to have nice flat cookies that keep the shape and don't spread, don't beat sugar and butter.If you don't have a cookie-cutter, use a glass cup with thin edges to cut out the cookies.Add some 50g of Dutch-processed cocoa to make chocolate sugar cookies.
