Tender chicken skewers marinated in orange and cilantro marinade are so easy to make and sooo delicious. Served with some salad or freshly cooked rice, they make a perfect weeknight family dinner.
1kilogramboneless, skinless chicken thighscut into bite-sized pieces
1/4cupchopped cilantro leaves(coriander)
1/4 cup orange juicefreshly squeezed if possible
2garlic clovespeeled and grated
2tablespoonsextra virgin olive oil
2tablespoonswhite vinegar
1teaspoon sugar
1/2teaspoon sea salt
Instructions
Prepare Skewers: If using bamboo or wooden skewers, soak them in water for at least 20 minutes to prevent burning.
Preheat Oven: Set the oven to 400°F (200°C) and allow it to preheat.
Prepare Chicken: Cut the chicken thighs into bite-sized pieces and set them aside.
Make Marinade: In a large bowl, combine chopped cilantro leaves, sugar, orange juice, olive oil, minced garlic, and white vinegar. Mix well to create the marinade. (This marinade can be prepared in advance and stored in the fridge for 2-3 days.)

Marinate Chicken: Add the chicken pieces to the marinade, mix, and let them marinate for 10 minutes before threading them onto the skewers.
Prepare Baking Sheet: Line a baking sheet with aluminum foil and parchment paper. Ensure there is just enough parchment paper to accommodate the chicken skewers without crowding.
Arrange Chicken: Place the marinated chicken skewers on the prepared baking sheet, leaving space between each skewer to ensure even cooking.
Bake: Cook for 15 minutes, turning the skewers at the 10-minute mark. Turn on the broiler function of the oven. Position the baking sheet under the broiler and broil the chicken until browned, for approximately 1 minute.

Notes
Ensure the parchment paper doesn't hang over the edges or touch the oven walls to prevent burning.
You can marinate the chicken for 10 minutes or overnight.
Don't forget to soak the wooden skewers before using them.
The cooking time might vary depending on your oven temperature, so please make sure to keep an eye on the chicken. It is cooked through when the internal temperature of the chicken reaches 165°F (75°C).
