This quick and easy chicken mince stir fry is a flavorful, one-pan meal that comes together in just 10 minutes. Made with ground chicken, fresh ginger, lemongrass, and a zesty lime-fish sauce dressing, it’s both healthy and delicious. Serve it over rice noodles or alongside a refreshing cucumber salad for a complete dinner that your family will love.
In a large saucepan, bring water to a boil and cook the rice noodles according to package instructions until al dente. Drain and set aside.
While the noodles are cooking, prepare the stir fry ingredients. Peel and finely dice or grate the ginger, and finely chop the lemongrass. Wash and chop the coriander.
In a small jar or bowl, combine the lime juice, fish sauce, and sugar. Shake or stir until well mixed.
Heat olive oil in a wok over medium-high heat. Once hot, add the diced ginger and lemongrass, frying for 1-2 minutes until fragrant and lightly golden.
Add the chicken mince to the wok and increase the heat to high. Stir-fry the chicken, breaking it apart with a spatula, until fully cooked and all the juices have evaporated.
