1kgRipe chilled watermelon (approximately 1/4 of a medium-sized watermelon
100gGreek or Danish feta cheese, crumbledUse your favorite variety.
1tbspExtra virgin olive oil
Juice of 1 lime
A handful of fresh mint leavesCut or torn into small pieces.
Instructions
Cut the watermelon into bite-sized cubes.
In a large bowl combine extra virgin olive oil, 1/4 of crumbled feta and 1/2 of the mint leaves.
Add watermelon and toss everything together.
Transfer the watermelon into a serving bowl.
Sprinkle the rest of the feta on top and garnish with remaining mint leaves.

Notes
This salad is extremely quick to prepare. I do not recommend making it ahead of time. It is best enjoyed freshly made. However, if you have to prepare it in advance or would like to bring it to a BBQ or summer party, follow these steps:
Pre-make the dressing and store it in an airtight container.
Store the cut watermelon in a separate container. Remove excess juice before combining it with the salad.
Crumble the feta and store it in an airtight container or a plastic bag.
Cut or tear the mint leaves and pack them in a small container or a plastic bag.
Once you are ready to serve the salad, you will just have to combine all the ingredients as described above.
