I love summer! And I love summer dishes because they don't require long cooking times and are usually very quickly put together. Hands down this Ultimate Summer Watermelon Salad with Feta and Mint is our family's favourite summer dish. And because we have summer here in Oz right now we have been enjoying this delicious salad two or three times a week.
This watermelon salad is very easy to make and can be served with pretty much anything. Our favorites are grilled halloumi or chicken skewers. But my kids will eat it just with fresh crunchy bread and who will blame them, it tastes soooo good.
As strange as it might sound, but the combination of the sweetness from the watermelon and saltiness from feta cheese is a marriage made in heaven. Fresh mint leaves elevate the summer flavors even more and the sourness of lime juice brings it all together. And did I mentioned you can put it together in under ten minutes? Yusss!
Start by cutting your watermelon into bite-sized cubes. You can put the cut watermelon in the colander to remove the excess juice, however, I never do this and my salad has never been watery. Now combine the freshly squeezed juice with olive oil, mint leaves, and some crumbled feta.
Add watermelon to the mix and toss gently to combine. Transfer watermelon into a salad bowl, generously sprinkle more crumbled feta, and finish off with some fresh mint leaves. How easy was this? 1 kg of ripe watermelon (approximately ¼ of a medium-sized watermelon
100g of Greek or Danish feta cheese (use your favourite variety) crumbled
1 tbsp of extra virgin olive oil
Juice of 1 lime
A handful of fresh mint leaves, cut or torn into small pieces.
Cut the watermelon into bite-sized pieces.
In a large bowl combine extra virgin olive oil, ¼ of crumbled feta and ½ of the mint leaves.
Add watermelon and toss everything together.
Transfer the watermelon into a serving bowl.
Sprinkle the rest of the feta on top and garnish with remaining mint leaves.

This salad is extremely quick to prepare. I do not recommend making it ahead of time. It is really best enjoyed freshly made. However if you have to do it in advance or would like to take it to a bbq or summer party follow these steps:
Premake the dressing and store it in an airtight container.
Store cut watermelon in a separate container. Remove excess juice before you combine the salad.
Crumble feta and store in an airtight container or a plastic bag.
Cut or tear the mint leaves and pack them in a little container or a plastic bag.
Once you are ready to serve the salad you will just have to combine all the ingredients as described above.
