I love summer! And I love summer dishes because they don’t require long cooking times and are usually very quick to put together. Hands down this Summer Watermelon Salad is our family’s favourite summer dish. And because we have summer here in Oz right now we have been enjoying this delicious salad two or three times a week.

I make this simple salad at least two times a week. Because it is easy to make and can be served with pretty much anything. Our favorite way to enjoy it is with grilled halloumi or chicken skewers. But my kids will eat it just with fresh crunchy bread and who will blame them, it tastes soooo good.

Ingredients

  • Note on watermelon: Look for a vibrant, red, and juicy watermelon without seeds.
  • Note on feta cheese: I use Greek feta cheese, but feel free to use Danish or marinated feta if that is what you prefer or have on hand,

Let’s make watermelon salad

Cut the Watermelon

  • If using the whole wash the watermelon thoroughly under running water and dry it with a kitchen towel.
  • Cut your watermelon into bite-sized cubes.

Prepare the Dressing

  • In a bowl, combine the freshly squeezed lime juice with a splash of olive oil.
  • Add in some chopped mint leaves and a handful of crumbled feta cheese.

Toss and garnish the salad :

  • Add the bite-sized watermelon cubes to the dressing mixture.
  • Gently toss the ingredients together until the watermelon is coated evenly.
  • Transfer the dressed watermelon to a salad bowl.
  • Generously sprinkle more feta cheese over the top.
  • Finish off the salad with a handful of fresh mint leaves for a burst of color and flavor.

Serve immediately and enjoy the delightful combination of sweet watermelon, creamy feta, and refreshing mint. Perfect for a light and refreshing summer treat!

Make this salad yours

We like to keep this salad simple, that’s the way my kids enjoy it: watermelon, feta, mint, and dressing. However, if you feel like you would like to add some more ingredients, go ahead and experiment.

  • Cucumbers: a very popular addition to watermelon salad.
  • Red onions: Many people enjoy red onions in a watermelon salad, and I can see why. However, if you are making the salad for your family and want your kids to enjoy it too, it might be better to skip the onions to keep the salad kid-friendly.
  • Balsamic Vinegar: Add a tablespoon of balsamic vinegar to the dressing if you like acidity in your salad.
  • Cheese Varieties: Feel free to explore different salty cheeses, such as goat cheese, instead of feta. 

How to store

If you have any leftover watermelon salad store them in an airtight container in the refrigerator, and consume them within 1-2 days.

This salad is not suitable for freezing.

Watermelon Salad With Feta And Mint

Juicy sweet watermelon, salty feta, sour lime, and fresh mint – are the magic ingredients for this ultimate summer watermelon salad. Delicious, refreshing, and done in under 10 minutes.

Ingredients
  

  • 1 kg Ripe chilled watermelon (approximately 1/4 of a medium-sized watermelon
  • 100 g Greek or Danish feta cheese, crumbled Use your favorite variety.
  • 1 tbsp Extra virgin olive oil
  • Juice of 1 lime
  • A handful of fresh mint leaves Cut or torn into small pieces.

Instructions
 

  • Cut the watermelon into bite-sized cubes.
  • In a large bowl combine extra virgin olive oil, 1/4 of crumbled feta and 1/2 of the mint leaves.
  • Add watermelon and toss everything together.
  • Transfer the watermelon into a serving bowl.
  • Sprinkle the rest of the feta on top and garnish with remaining mint leaves.

Notes

This salad is extremely quick to prepare. I do not recommend making it ahead of time. It is best enjoyed freshly made. However, if you have to prepare it in advance or would like to bring it to a BBQ or summer party, follow these steps:
  • Pre-make the dressing and store it in an airtight container.
  • Store the cut watermelon in a separate container. Remove excess juice before combining it with the salad.
  • Crumble the feta and store it in an airtight container or a plastic bag.
  • Cut or tear the mint leaves and pack them in a small container or a plastic bag.
  • Once you are ready to serve the salad, you will just have to combine all the ingredients as described above.
