1
large lime
1
garlic clove, crushed or pressed
1/2
cup
coarsley chopped cilantro (coriander)

cup
filtered water (optional)
sea salt and black pepper to season
Instructions
Cut the avocado in half and remove the pip. Using a tablespoon spoon the avocado flesh out and put it in the food processor.
Add crushed garlic, chopped cilantro, and lime juice and blend everything to combine.
If your dressing is too thick, add a little bit of filtered water, spoon by spoon until you have reached the desired consistency.
Taste the dressing, add salt and pepper and serve or refrigerate for later use.
Notes
Feel free to swap lime juice for lemon juice.
Don't like cilantro? Replace it with parsley or dill.
Add some chili flakes to add some heat to the dressing.
A tablespoon of organic Greek yoghurt will add some creaminess and extra protein to your dish.
And a dash of maple syrup will balance the acidity of the lime.
Store the dressing in an airtight container in the fridge for up to 4 days.
