How To Choose An Avocado?

To make a creamy dressing, you need a ripe avocado. If you are shopping at a small veggie shop, ask the owner to choose one for you. The guy at my local shop is brilliant at choosing them just right.

If you have to choose an avocado yourself, go for one that is dark in color and slightly soft to the touch. Avoid avocados with spots, as they are likely overripened, resulting in a stringy texture and unpleasant taste.

How To Make Creamy Avocado Lime Dressing

Step 1: Cut the avocado in half and remove the pip.

Step 2: Scoop the avocado flesh out and put it in a small food processor or a blender.

To keep your creamy avocado lime dressing fresh, transfer it to an airtight glass container and store it in the refrigerator for up to 4 days. For the best taste and texture, make sure to use it within this time frame. Give it a quick stir before serving, as it may separate slightly while stored.

Ingredients
  

  • 1 large ripe avocado
  • 1 large lime
  • 1 garlic clove, crushed or pressed
  • 1/2 cup coarsley chopped cilantro (coriander)
  • 1/4 cup filtered water (optional)
  • sea salt and black pepper to season

Instructions
 

  • Cut the avocado in half and remove the pip. Using a tablespoon spoon the avocado flesh out and put it in the food processor.
  • Add crushed garlic, chopped cilantro, and lime juice and blend everything to combine.
  • If your dressing is too thick, add a little bit of filtered water, spoon by spoon until you have reached the desired consistency.
  • Taste the dressing, add salt and pepper and serve or refrigerate for later use.

Notes

For the best texture and flavor, use ripe avocados. They should yield slightly to gentle pressure. Avoid overripe avocados with brown spots, as they can affect the taste of your dressing.

If you prefer a thinner dressing, add a splash of water or extra lime juice and blend until smooth. For a thicker consistency, simply blend less or use less liquid.
