This easy sauce is made with only 4 ingredients. All you need is an avocado, a lime, garlic clove and fresh cilantro (coriander). So simple.
How to choose an avocado?
To make a creamy dressing you need a ripe avocado. If you are shopping at a small veggie shop, ask the owner to choose one for you. The guy at my local shop is brilliant at choosing them just right.
If you have to choose an avocado yourself choose one that is dark in colour and just a little soft to the touch. If you see some spots on an avocado it is most likely overripened. Overripe avocados have a stringy texture and bad taste.
How to make avocado lime dressing
Now let's see how to make it.
1. Cut the avocado in half and remove the pip.
2. Scoop the avocado flesh out and put it in a small food processor or a blender.
3. Add crushed garlic, chopped cilantro, lime juice, salt and pepper.
4. Blend to desired consistency. Taste it and add a little more salt and lime juice if needed.
TIP! If your avocado dressing is thick, add a tablespoon of water. You can add up to ¼ of a cup to thin the dressing without compromising the taste.
Transfer the dressing to a glass airtight container and refrigerate for up to 4 days if not using immediately.

While the first thing that comes to mind is to use it as a dressing in a fresh salad, this avocado dressing can be used in many different ways.
- As a dip for fresh veggie sticks.
