Cut the avocado in half and remove the pip. Using a tablespoon spoon the avocado flesh out and put it in the food processor.
Add crushed garlic, chopped cilantro, and lime juice and blend everything to combine.
If your dressing is too thick, add a little bit of filtered water, spoon by spoon until you have reached the desired consistency.
Taste the dressing, add salt and pepper and serve or refrigerate for later use.
Notes
For the best texture and flavor, use ripe avocados. They should yield slightly to gentle pressure. Avoid overripe avocados with brown spots, as they can affect the taste of your dressing.
If you prefer a thinner dressing, add a splash of water or extra lime juice and blend until smooth. For a thicker consistency, simply blend less or use less liquid.To keep your creamy avocado lime dressing fresh and green, store it in an airtight container with a layer of plastic wrap pressed directly onto the surface of the dressing. Refrigerate for up to 4 days.
