A word about spices
What spices to use to season your potatoes is absolutely up to you. To make this recipe I used organic Vegetta, it contains a lot of different dried spices and I found it complements the sweetness of potatoes really well.
However, you can try and use different herbs and spices. Try these:
- Ground cumin and coriander
- Smoked paprika and chilli powder
- Garlic powder and paprika.
- Ground cinnamon and sea salt.

How to make crispy baked sweet potato slices
The secret to perfectly crisp baked sweet potato slices in the oven. You have to have it hot. I bake my potatoes at 220'C (440'F). So let's start by preheating the oven.
Prepare a baking tray by lining it with some parchment paper.
Then we will wash the potatoes and pat them dry. Sweet potato skin is quite rich in nutrients so if you want you can slice the potatoes without peeling them. Just make sure you washed the potatoes properly using a veggie brush.
Now slice a thin slice from one side of the potato and lay the potato on the chopping board, flat side down. This will give the potato stability and make the slicing process much easier. Slice the potato into 2 mm (0.07 inch) thick slices and arrange the slices on the tray.
Brush them with extra virgin olive oil. I like using a pastry brush for this.
Generously season the potatoes with the spices and transfer the tray into the hot oven. Make sure the temperature has reached 220'C (440'F) before you start baking.
Bake the potatoes for 15 minutes. Take the tray out, place it on the heat-proof flat surface and using kitchen tongs, flip the potatoes onto the other side.
Bake for another 10 minutes. Take the tray out again, flip them one more time and bake for another 10 minutes.
Now you should have perfectly crips golden sweet potato slices!
Why won't my potatoes get crispy?
If you didn't end up with the perfectly crispy sweet potato slices, these could be the reasons:
- Make sure the oven is hot before you start baking them.
- Pat the potatoes dry before cutting them, excess moisture will make potatoes soggy.
- Do not overcrowd the baking tray. Leave some space between the slices, so that they don't steam but bake in the oven.
- Do not skip flipping 😉
How to store
This simple recipe is a perfect meal prep and can be a great addition to your weekday lunches and dinners.
Once the potato slices are baked, let them cool down on the tray and transfer them into the airtight container. Refrigerate for up to 3 to 4 days. Enjoy cold or reheat in the frying pan for a couple of minutes.
