How to make it

chopped cooked chicken in a white bowl on a chopping board.

1. Grab your leftover rotisserie chicken and shred it into bite-sized pieces. You can use forks to pull it apart or use a stand mixer with the paddle attachment for a faster option (be careful not to over-shred).

2. Wash your celery and grapes. Dice the celery into small pieces. For the grapes, you can either halve them or chop them into quarters, depending on your preference.

3. In a large bowl, combine the shredded chicken, chopped celery, and grapes.

4. Add mayonnaise, garlic powder, and salt to taste. Start with a smaller amount of mayonnaise and add more until you reach your desired consistency.

5. Give your chicken salad a good stir to make sure everything is evenly distributed. Taste and adjust the seasonings with additional garlic powder, salt, or even a sprinkle of black pepper if needed.

What to serve with chicken salad?

This is the best chicken salad recipe because it is so versatile. There are endless ways you can serve this easy salad.

  • Spread the chicken salad on toasted bread or bread roll for a satisfying lunch. Add a layer of lettuce and tomato for extra flavor and crunch.
  • Pack the salad into tortillas for a portable and mess-free lunch option. Pile in some shredded lettuce, chopped veggies like red onion or bell pepper, and some fresh herbs for added freshness.
  • Skip the bread altogether and turn this into a healthy and light lunch. Fill large romaine or butter lettuce leaves with the chicken salad and top with crumbled blue cheese or feta for delicious lettuce wraps.
  • Transform your lunch into a fun finger food for the kids (and yourself!). Spread the chicken salad on small slider buns or mini croissants for a bite-sized treat.

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt to season

Notes

  • This recipe is perfect for using up leftover rotisserie chicken. If you don’t have any on hand, you can poach or bake some boneless, skinless chicken breasts and shred them when cool.
  • The amount of mayonnaise is adjustable based on your preference. Start with less and add more for a creamier texture. You can also substitute with Greek yogurt for a lighter option.
  • This recipe is a great base for customization! Try adding chopped red onion, toasted pecans, dried cranberries instead of grapes, or a dollop of Dijon mustard for extra flavor.
