Busy weeknights call for easy, flavour-packed meals, and these Oven-Baked Bang Bang Chicken Skewers deliver every time. Juicy chicken breast is marinated, baked until golden, and smothered in a creamy homemade Bang Bang Sauce with the perfect balance of sweet and spicy flavours. No grill required—just let the oven do the work. Serve with rice, a fresh salad, or wrap them in flatbread for a quick family dinner that's guaranteed to be on repeat.
Mix all ingredients in a small mixing bowl until well combined. Refrigerate until needed.
½ cup mayonnaise , 2 tablespoons Thai sweet chilli sauce, 1 teaspoon spicy sauce
Bang Bang Chicken
In a large bowl, combine olive oil, salt, garlic powder, onion powder, and paprika. Add the chicken pieces, tossing to coat evenly. Cover and refrigerate for at least 20 minutes or overnight for more flavor.
Thread the marinated chicken onto skewers. If using wooden skewers, soak them in water for 20 minutes to prevent burning.
Set your oven to 400°F (200°C). Place a baking rack over a foil- or parchment-lined baking sheet to allow even cooking.
Arrange the skewers on the rack, ensuring they are not touching. Brush them lightly with some Bang Bang sauce. Bake for 18-20 minutes, flipping halfway through, until the chicken is golden and reaches an internal temp of 165°F (75°C).
Drizzle or brush the skewers with more Bang Bang sauce before serving. Enjoy with extra sauce on the side!
Notes
For even-sized pieces: Slice the chicken breast while it's still slightly frozen. It makes it much easier to cut neat, even pieces that cook evenly.
Don't skip the marinade: Even 30 minutes adds great flavour, but if you have the time, marinate the chicken overnight.
Soak wooden skewers: Soak them in water for at least 30 minutes before threading on the chicken to help prevent burning.
Serve with extra Bang Bang Sauce: Save a little sauce for drizzling over the cooked skewers or serving on the side.
