  • 1 teaspoon sweet paprika
  • 1/2 teaspoon sea salt

  • ½ cup mayonnaise
  • 2 tablespoons Thai sweet chilli sauce

  • Mix all ingredients in a small mixing bowl until well combined. Refrigerate until needed.
½ cup mayonnaise, 2 tablespoons Thai sweet chilli sauce, 1 teaspoon spicy sauce

  • In a large bowl, combine olive oil, salt, garlic powder, onion powder, and paprika. Add the chicken pieces, tossing to coat evenly. Cover and refrigerate for at least 20 minutes or overnight for more flavor.
3 tablespoons olive oil, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon sweet paprika, 1/2 teaspoon sea salt, 1 kilogram chicken breast
  • Thread the marinated chicken onto skewers. If using wooden skewers, soak them in water for 20 minutes to prevent burning.
  • Set your oven to 400°F (200°C). Place a baking rack over a foil- or parchment-lined baking sheet to allow even cooking.
  • Arrange the skewers on the rack, ensuring they are not touching. Brush them lightly with some Bang Bang sauce. Bake for 18-20 minutes, flipping halfway through, until the chicken is golden and reaches an internal temp of 165°F (75°C).
  • Drizzle or brush the skewers with more Bang Bang sauce before serving. Enjoy with extra sauce on the side!

Notes

For easier, cleaner cuts, slice the chicken breast while it’s still slightly frozen. This helps prevent shredding and makes it easier to get even-sized pieces for perfectly cooked skewers!
  • Meal Prep: Marinate the chicken up to 24 hours ahead.
  • Storage: Keep leftovers in an airtight container for up to 3 days.
  • Reheat: Warm in a 350°F (175°C) oven for 5-7 minutes or microwave briefly.

Our family loves skewers (or kebabs, as they’re also called). They’re fun to eat, easy to make, and always a crowd-pleaser. My marinated oven-baked chicken skewers are already a readers’ favorite, but since they’re made with chicken thighs—and my oldest prefers chicken breast—I knew I had to switch things up. So, I experimented with a chicken breast version, and I’m happy to report: huge hit! Now, this Bang Bang Chicken Skewers recipe is on repeat in my weekly meal plan, and I have a feeling it will be in yours, too!
