These oven baked shrimp skewers are marinated in a bright orange, garlic and coriander marinade, then baked until tender and juicy. Serve with fresh avocado mango salsa and coconut rice for an easy, flavour-packed dinner that’s better than takeout.

¼cupcilantro leaves (coriander)finely chopped

Instructions
In a bowl, whisk together the orange juice, apple cider vinegar, sugar, and olive oil. Stir in the chopped cilantro and minced garlic.
¼ cup cilantro leaves (coriander), ¼ cup orange juice, 2 garlic cloves, 2 tablespoons olive oil, 2 tablespoons apple cider vinegar, 1 teaspoon sugar, ½ teaspoon sea salt
Add the shrimp to the marinade and toss to coat evenly. Cover and refrigerate for 30 minutes to 2 hours (but no longer, to avoid mushy shrimp).
600 grams shrimp (prawns)
Preheat your oven to 400°F (200°C). Line a baking sheet with foil or parchment paper and place a baking rack on top.
Thread the shrimp onto metal skewers (or pre-soaked wooden skewers)
Arrange the skewers on the baking rack and brush lightly with olive oil. Bake for 8-10 minutes, or until the shrimp turn pink and opaque.
Remove from the oven and serve warm with your favorite sides, like coconut rice or a fresh salad.
Notes
Use similar-sized shrimp: Choose shrimp that are roughly the same size so they cook evenly.Preheat the oven: Make sure the oven is fully preheated to 400°F (200°C) before the skewers go in.Watch the cooking time: Shrimp cook quickly. Once they turn pink and opaque, they’re done. Overcooking will make them tough and rubbery.Storage & reheating: Store leftovers in an airtight container in the fridge for up to 2 days.
