In a large mixing bowl, combine mayonnaise, Dijon mustard, minced garlic, and salt. Mix well to create a smooth marinade.
3 tablespoons mayonnaise, 2 tablespoons Dijon mustard, 3 garlic cloves, ½ teaspoon salt
Add chicken thighs (or your preferred chicken cut) to the bowl. Using your hands, thoroughly coat each piece with the marinade, ensuring all sides are evenly covered.
6 chicken thighs
Cover the bowl with an airtight lid or plastic wrap and refrigerate. Allow the chicken to marinate for at least 30 minutes, or up to 24 hours.
When ready to bake, preheat your oven to 200°C (400°F).
Place a wire rack over a baking tray lined with parchment paper or foil. Arrange the marinated chicken pieces on the rack, leaving space between each piece.
Bake the chicken in the preheated oven for 35-40 minutes, or until the chicken is golden and crispy on the outside and fully cooked through. If needed, use a meat thermometer to check that the internal temperature reaches 75°C (165°F).
Remove the chicken from the oven and let it rest for 5 minutes before serving.
Notes
Use Full-Fat Mayo – Full-fat mayo helps create a golden, crispy crust when cooking. Avoid low-fat versions, as they may contain more water and affect browning.Marinate for at Least 30 Minutes – While even a short marinating time helps, letting the chicken sit for at least 30 minutes (or up to overnight) helps achieve perfect results.Rest Before Serving – Let the chicken rest for 5 minutes after cooking to lock in juices.
