Mayo Marinated Chicken – Perfect Family Dinner

I’ve made this mayo-marinated chicken countless times, and my family absolutely loves it. The chicken is marinated in mayo-mustard mix and is baked to perfection, juicy inside and so deliciously crispy outside. This is, in my opinion, the best mayo marinade for chicken! There are only 5 ingredients you will need to make it. Let’s see what you’ll need.

📝 Recipe Ingredients And Substitutions

  • Chicken: I used chicken thighs to make this mayo-marinated chicken, but any chicken cut will work. You can use chicken breasts, drumsticks, or even chicken wings.
  • Mayonnaise: When choosing mayonnaise, make sure to get the best quality you can find. A good mayonnaise is made with egg yolks and olive oil or sunflower oil.
  • Dijon Mustard: Dijon mustard is my choice for this recipe but I think any mustard will work.
  • Garlic: Use as much or as little garlic as you like, but do not substitute it with garlic powder.

Step 1: In a large bowl, combine mayonnaise, Dijon mustard, minced garlic, and salt.

Step 2: Add the chicken thighs or your preferred chicken cut. Using your hands, coat the chicken pieces with the mayo marinade, ensuring every piece is evenly covered.

Step 3: Cover the bowl with an airtight lid and marinate the chicken in the refrigerator for 30 minutes or up to 24 hours.

Step 4: When ready to cook, preheat your oven to 200°C (400°F). Arrange the marinated chicken on a rack set over a baking tray, as shown in the photo

Step 5: Bake for about 40 minutes until the chicken is cooked through and golden.

☀️ Top Tips

  • If you’re not sure if the chicken is cooked through, use a meat thermometer. The chicken is perfectly cooked when the internal temperature in the thickest part reaches 165°F (75°C)

Yes, you can! If you don’t have Dijon mustard on hand, you can use yellow mustard, spicy brown mustard, or even whole grain mustard as alternatives. Each type will bring a slightly different flavor to the marinade, so feel free to choose the one that best suits your taste.

How can I make the marinade spicier?

You can add a pinch of cayenne pepper to the marinade to bring some heat and flavor. Adjust to your heat preference!

Ingredients
  

  • 6 chicken thighs approximately 1 kilogram (2.2 pounds)
  • 3 tablespoons mayonnaise
  • 2 tablespoons Dijon mustard
  • 3 garlic cloves minced
  • ½ teaspoon salt

Instructions
 

  • In a large mixing bowl, combine mayonnaise, Dijon mustard, minced garlic, and salt. Mix well to create a smooth marinade.

  • Add chicken thighs (or your preferred chicken cut) to the bowl. Using your hands, thoroughly coat each piece with the marinade, ensuring all sides are evenly covered.

  • Cover the bowl with an airtight lid or plastic wrap and refrigerate. Allow the chicken to marinate for at least 30 minutes, or up to 24 hours.
  • When ready to bake, preheat your oven to 200°C (400°F).
  • Place a wire rack over a baking tray lined with parchment paper or foil. Arrange the marinated chicken pieces on the rack, leaving space between each piece.
  • Bake the chicken in the preheated oven for 35-40 minutes, or until the chicken is golden and crispy on the outside and fully cooked through. If needed, use a meat thermometer to check that the internal temperature reaches 75°C (165°F).
  • Remove the chicken from the oven and let it rest for 5 minutes before serving.

Notes

Use Full-Fat Mayo – Full-fat mayo helps create a golden, crispy crust when cooking. Avoid low-fat versions, as they may contain more water and affect browning.
Marinate for at Least 30 Minutes – While even a short marinating time helps, letting the chicken sit for at least 30 minutes (or up to overnight) helps achieve perfect results.
Rest Before Serving – Let the chicken rest for 5 minutes after cooking to lock in juices.
