📝 Recipe Ingredients and Substitutes

Ingredients for a dish are arranged on a light surface: red and yellow bell peppers, olive oil, capers, lemon juice, red wine vinegar, cranberries, cilantro (coriander), and feta cheese.

Here is what we will need to make this healthy roasted pepper salad:

  • Bell Peppers: Known as capsicum in Australia, you’ll need red and yellow bell peppers for this salad to provide a vibrant mix of colors and flavors.
  • Cranberries: While cranberries add sweetness, you can substitute them with sultanas or dried blueberries if you can’t find cranberries.
  • Capers: These add a tangy flavor to the salad. If you prefer, you can omit them or use a small amount of chopped olives instead.
  • Feta Cheese: I used marinated goat cheese for its mild flavor, but feel free to use your favorite variety of feta cheese.
  • Red WIne Vinegar, Lemon, and Olive Oil: To make salad dressing.
