Whether you’re piling it onto crispy tortilla chips for a quick snack, spooning it over juicy baked coconut-crusted salmon, or adding a fresh, zesty twist to fish tacos, it just works. And since it’s naturally sweet, even the pickiest eaters will be on board. Just a little tip—if you’re serving it to younger kids, deseed the chilies to keep things mild while still packing in all that bright, tropical flavor!

📝 Recipe Ingredients

  • Mango: Choose a nice, ripe mango that is still firm to the touch. I’ve included a video to show you how to peel and dice a mango easily. 👇
  • Peaches: The same goes for peaches—we need them to be sweet and ripe but still a bit firm. You can easily substitute nectarines for peaches.
  • Red bell pepper: Bell peppers add some crunch to the salsa. You can also use yellow or green capsicum if you prefer. Yes, we call bell peppers capsicum. 🇦🇺
  • Red onion: Make sure to dice the onion very finely so kids will eat it too. When marinated in lime and fruit juice, the onion loses its bitterness, making it perfect for kids as well. If in doubt don’t use it 😊
  • Green jalapeño chili: Chili is kind of essential to Mexican recipes, but if you have a toddler at the table, it might be a good idea to leave it out or set aside a small portion without chili.
  • Lime: Lime is the best fit for this salsa recipe, but you could use lemon zest and juice if limes are hard to find.
  • Cilantro: Fresh cilantro leaves—what we call coriander in Australia! 😊

  • Step 1: Start by peeling and dicing the mango and peaches into small pieces. Finely dice the red onion, bell peppers, and chop the cilantro leaves. Deseed the jalapeño and dice finely. Zest the lime.
  • Step 2: Combine all ingredients in a bowl. Squeeze fresh lime juice over the mixture and gently toss everything together to combine.
  • Step 3: Taste the salsa and adjust with more lime juice, a pinch of salt, if needed.

You can serve it straight away or let it marinate for 10 to 15 minutes to develop the flavors.

Ingredients
  

  • 1 large mango peeled, stoned, and diced
  • 2 peaches or nectarines stoned, and diced
  • 1/2 red bell pepper diced
  • ½ small red onion finelly diced
  • 1/2 fresh green jalapeño chili finelly diced, seeds removed
  • ¼ cup cilantro leaves (coriander) chopped
  • 1 large lime for zest and juice

Instructions
 

  • Start by peeling and dicing the mango and peaches into small pieces. Finely dice the red onion and bell peppers, and chop the cilantro leaves. Deseed the jalapeño and dice it finely. Zest the lime.
    1 large mango, 2 peaches or nectarines, ½ small red onion, 1/2 fresh green jalapeño chili, ¼ cup cilantro leaves (coriander), 1 large lime
  • Place prepared ingredients in a bowl. Toss gently to combine.
  • Refrigerate in an airtight container until required.
  • Makes approximately 2 cups.

Notes

Kid-Friendly Version: For younger children, deseed the jalapeños to keep the salsa mild. You can also skip the chili altogether for a non-spicy version. If you’re serving it to very young kids, you can also skip the onion to make it even more kid-friendly.
Fresh Ingredients: Use ripe, firm mangoes and peaches for the best flavor and texture. Nectarines work as a great substitute.
Customization: You can swap red bell pepper with yellow or orange peppers for a different color and flavor. Feel free to adjust the lime juice and salt according to your taste.
Refrigerate: Store leftover salsa in an airtight container in the fridge for up to 2-3 days. Give the salsa a quick stir before serving.
