Step 1: Heat a small frying pan over medium heat. Add peppercorns and cook them for a couple of minutes until the pepper is aromatic.
Step 2: Add the remaining spices, except brown sugar and cook for another minute stirring constantly. Transfer the spice mix to a bowl and let it cool down.
