Peanut butter anybody? Don’t know where I have been up till now, but I only recently discovered my love for peanut butter. I especially enjoy it in my oats, with a drizzle of maple syrup and fresh raspberries. However I don’t always have time in the morning to cook breakfast and that is why I love, love, love overnight oats.

What are overnight oats?

In case you have spent the last ten years of your life on the moon and never heard about overnight oats, let me tell you, you have missed out! Overnight oats are your morning oatmeal without cooking. You put all the ingredients in a jar, refrigerate it overnight and enjoy a fibre- and protein-rich breakfast on the go. The best part is that you can add any flavour you like. You can make chocolate oats, almond and orange oats, or these delicious banana and peanut butter overnight oats.

How long do the banana and peanut butter overnight oats last?

You can keep your oats in the fridge for 2-3 days. This is a great breakfast meal-prep to make on Sunday night and enjoy during the week.

Can I heat the overnight oats up?

Prefer a warm breakfast in the morning? No worries! You can warm the overnight oats in the microwave or in a small saucepan on the stovetop. It is absolutely fine. You might need to add a little bit more milk if it becomes too thick.

Banana and peanut butter overnight oats recipe

Ingredients
  

  • 1 large banana approx 100 grams
  • 300 ml any milk
  • 1 cup rolled oats
  • 2 tablespoons pure peanut butter
  • 4 tsp chia seeds
  • 1 tsp ground cinnamon
  • 2 teaspoons  maple syrup or honey (optional)

Instructions
 

  • Start by mashing your ripe banana with a fork until smooth. Then, mix in your favorite peanut butter to create a delicious and creamy base.
  • Pour in your chosen milk and stir well until everything is thoroughly combined and there are no streaks of peanut butter.
  • Now, add your rolled oats, chia seeds (if using), ground cinnamon, and a pinch of salt (optional) to the mixture. Give it a good stir to ensure all the ingredients are evenly distributed.
  • Divide the oat mixture between two mason jars or airtight containers. Seal them tightly and refrigerate for at least 4 hours, or ideally overnight.
  • In the morning, grab your jar of overnight oats and enjoy! Feel free to add your favorite toppings like sliced banana, chopped nuts, granola, a drizzle of honey or maple syrup, or even a dollop of yogurt for an extra creamy and delicious breakfast.

Notes

  • You can use any type of milk you like, such as dairy milk, almond milk, oat milk, or soy milk.
  • Feel free to adjust the amount of peanut butter to your preference.
  • This recipe is easily doubled or tripled to make enough for the whole family.
  • While rolled oats are the recommended choice due to their quicker soaking time and ideal texture, steel cut oats can also be used! Adjust the soaking time (aim for at least 8 hours, or preferably overnight) and potentially add more milk to achieve the desired consistency.
